I posted this video on my Instagram stories and you guys went NUTS!

I wasn’t expecting THAT kind of reaction.

But…I LIKE IT!!

When I was going through pre-med studies and doing my anatomy “prosection” course, I was already eating fairly healthy, or at least, learning as much as I could about doing it. (My teenage years were pretty disastrous…truth be told.) I became vegan for a good many years during and after my undergraduate days.

Not strict or militant about it but I wasn’t eating or choosing animal products if the decision were mine to make.

However, I was also exercising a lot and I am anemic. I fell back into eating copious amounts of protein, which I felt was better choice than eating a lot of carbs in the form of starches (okay, bread…vegan bread but still).

Back ‘n forth, back ‘n forth times a few decades and I still find myself leaning heavily into the vegan and vegetarian realm – or “plant-based”, as it’s now referred to.

It more sustainable, it’s cheaper and it’s EASIER to cook/clean/make/eat. Done.

I am ALL about easy.

CHICKPEA POTATO PATTIES – (vegan, easy, healthy)

Ingredients:

  • I can of chickpeas
  • 0.75 – 1 lb of small potatoes (organic), I used fingerling
  • 2-3 cloves of garlic (raw),
  • avocado oil (or grapeseed),
  • 1/2 C of water (approximately),
  • Salt/pepper/parsley or cilantro…

Boil or bake potatoes as you normally would. Cube and set aside. Process (in blender or similar) the chickpeas, garlic and seasoning (<- add more than you think you would), then add most of the potatoes and process further. Add water. When nearly done, think “meal-y” and not smooth, add the remaining potatoes and 1-2 TB of avocado oil (or grapeseed or coconut…NOT olive) to the mix for about 10-15 secs.

Spoon out and place on frying pan. Pat down to form more of a flat cake. Brown each side for about 2-4mins.

Done!

ALL ingredients are organic!

Options: Add quinoa, corn or rice to the patties to make them more FIRM. Use these as  the “meat” in a “burger”. Use a side dish. Smear with avocado or guacamole.
